Chocolate Chia Pudding

This is a really simple recipe that you can leave in the fridge overnight and enjoy the next day at work / after a workout / for a simple breakfast without having to do anything!

1/4 cup of Cacao powder

2 tablespoons of sugar/sweetener of your choice e.g. maple syrup, agave, rice malt syrup or Stevia (add to taste)

1/2 teaspoon vanilla powder or extract

1 cup of coconut milk

1/3 cup chia seeds

Sift the Cacao powder into a bowl.

Add the sugar, vanilla powder/extract, pinch of salt.

Whisk together.

Add the coconut milk and whisk again.

Add the chia seeds and whisk into a pudding texture. Leave to rest for 5-10 minutes and then quickly whisk again.

Cover and refrigerate for 4+ hours. Gently mix after the first 30 minutes.

Spoon into a small bowl and add mixed berries, coconut, goji berries, or anything that you feel will complement the pudding.
